Buffalo Chicken Burritos

This recipe is inspired by one of my favorite things from college, there was this place on campus called The Wrap and they made these. I would order these all the time and I was sad to find out they had closed. I guess that isn’t that much of a shock since it has been over 15 years! Anyway, I have been craving them and wanted to make it, and dang I am happy I did! These are perfect for lunches, meal prepping, light dinners, or even parties. They are super simple and you can adapt it for gluten free, vegetarian, and low carb/keto with very simple swaps. I made my chicken in my Instant Pot and shredded it up making it even easier. These will be clutch when sports start up again and we have those crazed evenings, rushing to practices. My kids even liked them so I can throw a small one in for their lunches. I even made my own blue cheese dressing and it is so freaking good, only takes a few minutes and you will definitely want to drizzle it on all the things.

I also remember only being able to afford appetizers, my girlfriend and I would walk to the Cheesecake Factory at the Pru and order their nachos and share that for dinner. They are soo good. Buffalo Chicken Burritos

  • 2 chicken breasts, cooked and shredded or 2 cups chickpeas, drained and rinsed

  • 1/3 cup and 2 Tablespoons Buffalo Sauce

  • 6 stalks of celery, sliced or diced

  • 1 cup shredded carrots

  • 4 Burrito Sized Tortillas or Lettuce Cups

  • 1 cup rice, cooked (omit for low carb)

  • 1/2 cup Blue Cheese Dressing (see below)

- In a bowl, mix the chicken with the Buffalo sauce until all combined, set aside

- Warm the tortillas in the microwave for 15 seconds each.

- Place some chicken, rice, celery, carrots, and spoon over the blue cheese dressing. Roll into a burrito!

Blue Cheese Dressing

  • 1/4 cup sour cream

  • 1/4 cup mayonnaise

  • 1/4 cup milk

  • 1/2 cup blue cheese crumbles

  • 1 Tablespoon White Wine vinegar

  • 1 Tablespoon fresh or dried chives

  • 1 Tablespoon Onion Ranch Mix

  • 1 clove garlic, minced

- In a bowl or jar, mix everything together.

Start by making some of this craveable blue cheese dressing, it’s so easy, everything in a bowl and mix!

Simple and delicious ingredients. If you are doing it low carb, just leave out the rice and swap that tortilla for butter lettuce cups.

The chicken could not be simpler - just mix cooked and shredded chicken with a Buffalo Hot Sauce. If you are vegetarian, just swap chicken for jackfruit or chickpeas!
