BBQ Ranch Chicken Salad

Salads are so good in the Summer, actually any time of the year and I feel like BBQ chicken is also a super Summer item. So let’s combine them for an epic salad you can make any day, perfect for meal prep or a light and filling dinner, you will love this. I make a simple BBQ chicken with just a great rub seasoning and top a bed of greens, vegetables, and seeds for a satisfying mouthful. Plus, my BBQ Ranch Dressing is out of this world and is only 4 ingredients! Just measure it in the mason jar, cover, and shake it for a mess free dressing you will want to drizzle or dip all the things into.

As always, below is a guide to tailor it to your tastes and dietary preferences so everyone can enjoy this goodness.

  • Whole30 - replace the corn with some roasted sweet potatoes and use a Whole30 approved BBQ sauce and mayo.

  • Keto/low carb - omit the corn and use a low sugar BBQ sauce

  • Vegan - skip the chicken and use crispy BBQ rub roasted chickpeas or BBQ rubbed seared tofu.

  • As is, it is Gluten free and Dairy Free!

BBQ Ranch Chicken Salad

  • 1 pound chicken breasts

  • 1 Tablespoon BBQ Rub seasoning

  • 1 teaspoon salt

  • 1 bag Spring Salad Mix

  • 1 cup corn

  • 2 bell peppers, sliced

  • 1/2 cup green onions, sliced

  • 1/4 cup sunflower seeds

  • 2 Tablespoons pepitas

  • 1/2 cup BBQ sauce

  • 1/2 cup mayonnaise

  • 1/2 cup almond milk

  • 1 1/2 Tablespoons Onion Ranch Powder

- Preheat the oven to 400. Season the chicken breasts with salt and BBQ Rub on both sides. Bake for 20-30 minutes or until the internal temperature is 165. Cut into cubes and set aside.

- In a large bowl, combine the greens, corn, peppers, green onions, sunflower seeds, and pepitas. Toss together and add the chicken.

- Place the BBQ sauce, mayonnaise, almond milk and Onion Ranch Powder in a jar and shake or whisk together until all combined. Serve with the salad.

Get those chicken breasts seasoned up and baked off. You could also do this in the Instant Pot, grill them, sear it on the stove, or slow cook it. If you use the IP or Slow Cooker, it will be more of a shredded chicken.

This dressing is so simple and delicious, I love making it in a mason jar because I can use the measuring on the jar and not mess up another dish! Use your favorite BBQ sauce, some mayo, milk to thin it out, and my Onion Ranch Seasoning to make it soooo yummy.
