Queso Chicken Bake

It’s freezing here and I know I am using my pantry and freezer as my grocery store while the roads are icy. This is a perfect family meal that uses pantry staples to create something everyone will love. So stock up on these items next time you are at the store to bust out a good one when you can’t get the fresh stuff! It is gluten free and dairy free if you choose, I love Trader Joe’s Vegan Nacho Dip for it. So easy and ready in about 30 minutes, about the same time it takes to make some rice to serve alongside!

Queso Chicken Bake

  • 4 chicken breasts

  • 2 Tablespoons Taco Seasoning

  • 1 teaspoon salt

  • 1 can diced green chiles (4 oz)

  • 1 can diced tomatoes with chiles (like Rotel)

  • 1 can corn, drained

  • 1 can black beans, drained and rinsed

  • 16 oz vegan queso or 16oz Velveeta cut into cubes

  • Optional toppings - cilantro, green onions

Preheat the oven to 400

Season both sides of the chicken breasts with the taco seasoning and salt. Place into a baking dish

Pour the Rotel and Chiles over the chicken and spread evenly, then sprinkle over the corn and beans.

Spread the queso in an even layer or sprinkle the cubed cheese over the top.

Bake for 25-30 minutes or until the chicken is fully cooked to 165 internal temperature. Remove from the oven and let cool for 5 minutes before serving and sprinkle with the cilantro and green onions, if using,

There is everything you need, I always have the canned goods in my pantry and if you like Velveeta, that is also a pantry item. I make my own taco seasoning to save money and adjust the spice level for my family.

I love this Trader Joe’s Vegan Nacho dip because it is easy to grab but I have used several different varieties of plant-based dips as well as the Velveeta, they all work well.

Season with salt and Taco seasoning, both sides

Get the canned items all ready, drain and rinse the beans, drain the corn, and pop open the tomatoes and chiles.

Rotel down first, leave those juices to help the flavor and texture

Pour some Chiles on meeeee!

Corn and beans. If you prefer a different type of bean, change it! I’ve used pinto beans that I had in the freezer and it’s amazing too.

Spread that delicious queso all over the top and pop that baby into the oven. Go sit down or make some rice, it’s your call!
