TexMex Cheesesteaks

If you have seen any of my recipes, you might have noticed that I am all about easy and delicious family meals, because that is what I like to make and eat. Sandwich night is a frequent occurrence at our house, those nights that I want it easy. But this, this sandwich is on another level, it’s easy so it checks that box, minimal cooking, check, and mindblowingly awesome double check! I love Philly Cheesesteaks but I also know that I cannot make an authentic one so I wanted to make one that is a knockoff, but Texan. Why make a cheese wiz concoction when you can use one of the best things on earth, QUESO! Peppers and onions are pretty traditional but throw in some jalapeno for some heat and we are talkin’. And because I can never remember the cut of meat they use, I just used some thick sliced deli roast beef and lemme tell you, its perfect.

Now I know there are so many different tastes, preferences, and dietary considerations so I wanted to give you some alternatives that might be right up your alley. I have a couple girlfriends that I bounce recipes off of and they have wildly different preferences, which is perfect, so some of these come from KT and J!

  • Swap the roast beef for thinly sliced chicken or even thick cut deli turkey. For the chicken, slice it when it is a little frozen, that will help get it thin and make sure to cook it all the way through.

  • Low Carb or Keto - swap the bun for a lettuce cup or it was suggested by one of the gals, a zucchini boat. I personally don’t think that sounds great but maybe you will think it is awesome.

  • Vegan - swap that meat for shredded jackfruit or tempeh and use your favorite plant-based queso.

  • Gluten free - use your favorite GF bun!

  • Dairy free - use one of those amazing vegan queso brands out there like Trader Joes, Honest Stand, and Siete

I hope that covers all the bases for different choices! These would be amazing to have for a party too, you know whenever we can have gatherings again. Total man food that is great to watch a game and chow down on, you know, when sports aren’t just re-runs anymore. I will say, my kids were not total fans, one only ate the meat and the other only ate the bread, but my kids are weird sometimes.

TexMex Cheesesteaks

  • 1 Tablespoon oil

  • 2 onions, sliced

  • 2 bell peppers, sliced

  • 1 jalapeno, sliced and de-seeded

  • 1 teaspoon salt, divided

  • 1 teaspoon pepper, divided

  • 1 pound roast beef, cut into strips

  • 1 teaspoon taco seasoning

  • warmed Queso

  • 6 soft hoagie sandwich rolls

- In a large sauté pan, heat the oil at medium-high heat. Once hot, add the onions, peppers, jalapenos, and half of each the salt and pepper. Cook, stirring occasionally, until the onions are browned and the peppers are soft.

- Drop in the roast beef strips along with the taco seasoning and remaining salt and pepper. Cook until there are some crispy bits.

- Prep the sandwiches by spreading some queso at the bottom of the bun, top with the meat mixture and then spoon a little more queso on top.

Peppers, onions, and jalapeno, they might as well be the Texas holy trinity.

Get those all golden, soft, and some burnt bits, that’s where the flavor magic happens. You could even do this in the oven at 400 for about 25 minutes or even put it on the grill!

Now just drop in those strips of roast beef - the kind from the deli, and stir in the seasonings. Let that all cook together a little and you are ready!

Now gather your sandwich components - your meat mix, queso (I grabbed some queso blanco at Costco), and your rolls (make sure they are nice and soft). And get it going - bun, queso, meat, queso, mouth…
