Trail Mix Cookies

These cookies are so freaking delicious, they bring back that classic trail mix from the 80s that was barely nutritional but these are actually healthy. There is no refined sugar, no flour, and no butter. Basically health food and you can eat these for breakfast, a snack, and perfect fuel for all the adventures. If you have a peanut allergy, have no fear, it works great with almond or sunflower butter. These were inspired by Ambitious Kitchen and her amazing Flourless Peanut Butter Oatmeal Cookies and I made a couple minor tweaks. My kids loved these (and my youngest usually hates all of my cookies), the husband enjoyed them, and I took them to a moms night and they all gave the thumbs up. That pretty much covers all the people! If you are gluten free, just make sure your oats are GF certified. Vegans can use a flax egg in place of the chicken egg too. Please make these and devour them, my batches don’t even make it to the freezer!

Trail Mix Cookies

inspired by Ambitious Kitchen

  • 3/4 cup old fashioned oats

  • 1/2 teaspoon baking soda

  • 1 cup natural peanut butter

  • 2/3 cup coconut sugar

  • 1 teaspoon vanilla extract

  • 2 large eggs

  • 1/3 cup mini chocolate chips

  • 1/3 cup mini M&Ms

  • 1/3 cup raisins

- Preheat oven to 350 and line a baking sheet with parchment paper

- Mix the oats and baking soda together in a small bowl. In a larger bowl, mix the peanut butter, sugar, vanilla, and eggs until all combined. Then carefully mix in the oat mixture.

- Sprinkle over the chocolate chips, M&Ms, and raisins and fold them into the batter.

- Using a medium scoop, scoop out the cookies and then roll into smooth balls. Flatten slightly with hands.

- Bake for 9-12 minutes or until the edges are slightly browned. Cool on the sheet for 5 minutes then transfer to a wire cooling rack.

I like to gather everything because these are made really quickly which is awesome, I was able to bust out a second batch in minutes for a moms night.

The dry ingredients are literally oats and baking soda, that’s it.

Natural peanut butter is used instead of those peanuts in the old fashioned trail mix. I love using coconut sugar because it is a natural sweetener, it isn’t super expensive, and it doesn’t have a weird taste like many alternative sugars do.

Here are those mix ins, the classics. I also like to whisk up my eggs separately so they are distributed evenly.

Add the eggs and vanilla to the bowl and start mixing

Just look at this beautiful batter, it should look like this before adding in the dry.

Pour and stir the oat mixture. No need to over mix, just get it combined.

I like to mix up the mix ins so you aren’t getting a glob of one thing.

I use my trusty medium cookie scoop and place them on the parchment or silicone. Give them space because they spread a bit.

Then I go back and roll them into neat balls.
