Mahi Mahi Burrito Bowls

This is one of those non-recipes, recipes, easy to customize, no real measurements, and dead simple. The kind of thing you make for busy nights and you just want the people to be fed, something healthy, minimal effort, and they don’t complain. Now if your crew doesn’t like fish (my kids are seafood obsessed), just swap the Mahi for some chicken, steak, or even tofu. You can prepare it all the same way! This can be adapted in so many ways so it works best for you:

  • vegan - use taco spiced tofu cubes or some pinto beans

  • low carb - use cauliflower rice and omit the corn

  • Whole30 - same as the low carb option

  • No fish - sear chicken or steak rubbed with the taco seasoning

  • Already dairy free and gluten free!

This is like a loaded fish taco but all in a bowl for easy eating, bowls of food are just comforting. I find Mahi very filling so it was a great meal, I didn’t need to snack later.

We love Mahi here and I just season it with taco seasoning and salt and then sear it in a hot pan.
