No-Bake PB S'mores Clusters

Want to bake but not really at the same time? I have been baking a ton, even making my first bread ever, with a sourdough starter! I am very proud, can you tell? Well, the other end of the spectrum is I am freaking tired, like all the time. Wiped out from so much cooking, feeling anxiety every time I read the news, having my kids around me ALL THE TIME, prepping homeschool stuff (there’s a reason I did not go into teaching), and wanting to make sure my family doesn’t feel all the stress of this time in quarantine. For me, food = comfort, not always the best coping mechanism but I know my kids will remember making these little messy numbers. And that is what counts, them looking back and saying, yeah that was weird but we were together and made food and watched movies and played endless games and went on walks and bike rides every day, no matter the weather.

If you are feeling the same, these might just be perfect for you too. Everything is in the pantry and I have not had a tough time finding out there in the abyss that is grocery shopping. Best part is you can swap products for what you prefer - gluten free peeps, use cinnamon chex, vegan lovelies, use vegan marshmallows and chocolate chips, nut allergies, use a seed butter, and finally my dairy free babes, use allergen free chocolate chips.

This is a MESSY recipe but so fun to make, melty chocolate, crunchy cereal, and pillows of marshmallows make a new take on s’mores. I included a ProTip at the end of the post on how to handle the dishes from this, so make sure you scroll down! No-Bake PB S’mores Clusters

  • 2 1/2 cups mini marshmallows

  • 3 cups Cinnamon Toast Crunch or other Cinnamon cereal

  • 12 oz (1 bag) semi-sweet chocolate chips

  • 3 Tablespoons creamy peanut butter

  • sprinkle of salt

- Combine the marshmallows and cereal in a large bowl. Cover a baking sheet with wax paper, parchment paper, or silicone mat.

- In a microwaveable bowl, combine the chocolate chips and peanut butter. Melt in the microwave at 30 second intervals, stirring until all smooth and melted.

- Pour the chocolate mixture over the cereal and marshmallows and stir carefully until everything is covered.

- Use a 1/4 cup measuring cup to create mounds, placing them on the prepared sheet. Sprinkle with salt and add extra marshmallows if desired.

- Refrigerate or place in freezer to store before eating.

And finally scoop it out into “cookies” or clusters, whatever size you like. Then sprinkle with a little salt and maybe add some extra marshmallows so people know they are in there! Pop them into the fridge or freezer to get that chocolate firmed up. Store them in the fridge so they don’t become a melty mess.

PRO TIP:

I suggest throwing all the chocolatey dishes into the dishwasher because chocolate is a pain to clean.
