Classic Egg Salad

I know after Easter, everyone is like, what am I going to do with all these hard boiled eggs! The most classic answer is Egg Salad, so creamy and delicious, just spoon it onto bread or lettuce. This is my classic recipe I have been making for years, I add some onion powder and it gives it something extra. I got the idea from a restaurant called Johnny Rocket's, mainly known for their burgers but their egg salad was something special. They have since discontinued the egg salad sandwich but I found out their secret was the onion powder. I added some of my own secrets to my recipe and now it’s perfect! Classic Egg Salad

  • 6 hard boiled eggs

  • 1/4 cup mayonnaise

  • 2 Tablespoons relish

  • 2 Tablespoons sliced green onions

  • 1 teaspoon Dijon mustard

  • 1/2 teaspoon onion powder

  • 1/4 teaspoon smoked paprika

  • salt and pepper to taste

- Chop eggs and place in bowl with remaining ingredients and mix. Serve on bread, on a salad, or in a lettuce cup.
