BLT Egg Bites

I am sure I am not the only one but breakfasts are wearing thin around here, feeding my whole family each and every morning, an actual breakfast is exhausting. With school starting again soon, praying that it is in person for my girls, I need an easy start to the day. These little babies are perfect, they are packed with protein, don’t take a ton of time or ingredients, and who doesn’t like BLTs (I mean, other than my kids, insert eyeroll) I used to hate tomatoes but man, as I have gotten older, I finally see the light and these Summer sweet cherry tomatoes are perfect. These are easily adapted to what you have on hand and what you like. They are keto/low carb plus gluten free as is., You can swap the bacon for plant-based for a vegetarian breakfast. Leave out the cheese for Whole30 or use vegan cheese for dairy free. Choose the flavors you love, and keep some in the freezer for crazy or lazy mornings.

BLT Egg Bites

  • 8 slices bacon, cooked and crumbled

  • 9 whole eggs

  • 9 egg whites

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • pinch cayenne powder

  • 3 cups greens of choice, loosely packed and chopped

  • 1 cup mozzarella, shredded

  • 24 mini tomatoes, sliced in half

  • 2 Tablespoons basil, thinly sliced

- Preheat oven to 375

- In a bowl, whisk the eggs, egg whites, salt, pepper, and cayenne until all combined

- Spray a muffin tin/mold with oil, if using a silicone mold, make sure to put it on a baking sheet.

- Layer the greens at the bottom of each cup, followed by bacon, mozzarella, and place a few tomatoes in each cup then the egg mixture, pouring slowly, fill to the brim of the muffin cup.

- Sprinkle with a little extra salt, and a little bit of basil on each cup.

- Bake for 18-20 minutes or until the centers are set.

Chop up the bacon, whisk up the eggs, slice the tomatoes, and make sure you put a sheet under your muffin mold.

Chopping up the greens is a great way to get a bunch of those healthy leaves, these are the L of the BLT. I used a power greens mix for mine, it has baby spinach, kale, and swiss chard. Use whatever is your favorite or what you have on hand.

cheese it up! Totally optional and use what you like. When I was trying to develop this, I was going back and forth with my friends what cheese would work best. We thought cheddar, swiss, gruyere, goat cheese, or even pepper jack. Again, use what you have and what you like!

Just get those tomato gems in those cups, I love the heirloom cherry tomatoes that come out in the Summer. These add the perfect amount of sweetness to your breakfast.

Pour in the egg, be careful, it can spill easily while it settles down, you will probably have to come back and pour a little more after the first round.

A little sprinkle of basil brings the perfect amount of freshness and floral flavor. Add a little salt too for those tomatoes to really pop with flavor!
