Ratatouille Sauce

Ratatouille is such a simple and humble dish but oh so good, it is a French stew generally. Most people know it from the fabulous Disney movie, Ratatouille, about a rat who has in incredible sense of smell and taste and becomes a chef. It is a lovely movie and whenever I serve this to my kids, I put it on, it truly helps with motivation to eat. Because really, this is a bunch of VEGETABLES! Which is awesome for the adults but not a huge selling point for the kids.

I love to make it a sauce, something I can drape over some pasta or tortellini or even some cauliflower rice. It is easy to cook, just some chopping time and a big pot and you have a sauce you will love. It is naturally vegan, Whole30, low carb/keto, paleo, gluten free, dairy free, and freezer friendly. Want to add protein? Vegans should throw in some beans and others should use some chicken or shrimp. Perfect for your Meatless Monday and I have not had any issue finding these vegetables at the store, I guess people are not jonesing for an eggplant globe… I love it on pasta with a little sprinkle of feta but it is bangin’ on tortellini….

Ratatouille Sauce

  • 3 cups eggplant, diced (about 1/2 a medium)

  • 2 medium yellow squash, sliced

  • 3 small zucchini, sliced

  • 2 bell peppers, sliced

  • 1 medium onion

  • 2 Tablespoons oil

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 1/2 teaspoon smoked paprika

  • 1 1/2 teaspoons Herbs de Provence

  • 1 jar tomato basil pasta sauce

  • 1 Tablespoon balsamic vinegar

- Place all the vegetables in a large pot with oil, salt, and pepper. Cook on medium-high heat to cook them down and tender, stirring occasionally

- Once cooked, add the paprika and Herbs de Provence, stir until all over.

- Pour in the pasta sauce and balsamic vinegar, stir and lower heat to low. Let simmer for about 10-15 minutes.

- Serve over pasta prepared as directed.

Just throw all the vegetables in the same pot together with oil, salt, and pepper. Put it on the heat and let it cook!

Add the spices and stir again, the onions will start to brown and the rest will be tender.

Pour in the sauce and you are almost done!

Stir in the sauce and balsamic vinegar and let it simmer for a while. That’s it.
