Quick Chicken Cacciatore Pasta

Chicken Cacciatore is a delicious meal and usually takes a while to get those deep, braised flavors. Well, I wanted something faster and more kid friendly and I made a sauce with all those flavors, and it is ready in about 30 minutes! With cooler temps starting, cozy dinners are all we want, and this hits all the things, plus it is packed with vegetables to nourish your body too. Easy to adapt for your family too, below are edits you can make:

  • Gluten Free - use GF pasta

  • Low Carb - use spaghetti squash as your “pasta”

  • Vegan - swap the chicken for cooked lentils

This is also a perfect sauce to prepare and freeze for even easier dinners! Just cool completely before storing in a freezer bag or container.

Quick Chicken Cacciatore Pasta

  • 1 pound cremini mushrooms, sliced

  • 2 Tablespoons oil

  • 1 large onion, diced

  • salt and pepper

  • 2 cloves garlic, minced

  • 1 pound ground chicken

  • 1 jar sliced roasted peppers, drained

  • 1 can black olives, sliced

  • 1 jar marinara sauce

  • 1 Tablespoon Balsamic vinegar

  • 1 Tablespoon Italian herb seasoning

  • Pasta of choice

Prepare the pasta according to the pasta instruction.

While the pasta is being prepared, heat a large pot on medium-high heat. When it is hot, drizzle in the oil and the sliced mushrooms and stir and cook until browned.

Stir in the onions and sprinkle with salt and pepper, cook until translucent and slightly browned. Then stir in the garlic and cook for a minute.

Drop in the ground chicken, cook while breaking it up with a spoon, once cooked, season with salt and pepper.

Stir in the remaining ingredients and let simmer.

Once the pasta is ready and the sauce is bubbling, serve!

Mushrooms are a flavor and nutritional powerhouse, get them down into the pot first with oil only.

When they are nice and browned like this, you season with salt and pepper. If you season too early, it will make the mushrooms release more water which makes them take longer to cook and they get squeaky.

Chicken in now, you can also use ground turkey if that is what you have!
