Peppermint Bark Crackers

Welcome to Treat Week 2020!!! This week I will have a new recipe everyday to celebrate the start of the season and on the last day, I will show you how to make a platter or tin to give away to your people.

We love peppermint bark here in Casa de Campbell, I have made a version for years but it is a ton of work. It has a layers of white chocolate with crushed candy canes with a center of peppermint chocolate ganache. Very decadent and delicious, worth the work but I am burned out from all of that. I decided to make an easy no-cook or bake option with chocolate graham crackers as the base. I feel like everyone forgets about the chocolate graham cracker, you shouldn’t, they are delicious. Then I got candy melts (much easier to work with than chocolate) and the peppermint extract helps really seal the deal with that candy cane flavor.

This was tested with a bunch of neighbors, my family, and some ladies from our party planning group, and they were universally loved. These are perfect to make with kids, they can help dip and/or sprinkle with candy canes. Get your aggression out on those candy canes, I like to smash them in a bag with a meat mallet. And I am not giving options to make these any other way, because it’s the holidays and we all need some cheerful treats this year. Put these in a tin for the neighbors, on a platter for a party or straight out of the storage box when you need a festive hit.

Peppermint Bark Crackers

  • 12 chocolate graham crackers, broken in half

  • 1/2 package vanilla candy melts

  • 1 teaspoon peppermint extract

  • 6 candy canes, crushed

- Melt the candy melt by placing in a microwave safe bowl and microwave at 50% power, stir then add the peppermint extract, then another 30 seconds at 50% power, to completely melt. Stir vigorously to make it smooth.

- Dip the front of the cracker into the candy melt and place on a parchment or wax paper covered sheet. Sprinkle with the candy cane chunks. Continue until done.

- Chill in the fridge until hardened and serve.
