Bacon Avocado Slaw

This was posted on Instagram too but I always like to have these on the site too for easy reference.

Bacon Avocado Slaw

  • 6-8 slices bacon, cooked and crumbled (plant based if vegan)

  • 1 bag (16 oz) coleslaw mix

  • 1/2 cup sliced green onions

  • 2 cups celery, sliced

  • 1/2 cup slivered almonds

  • 1/2 - 1 whole avocado diced

  • 1 pint cherry or grape tomatoes, halved

  • 1 cup Chili Avocado Ranch dressing

- Toss all ingredients together in a bowl and sprinkle with additional green onions and/or bacon on top before serving.

It’s as easy as placing everything into a bowl, reserve some bacon and green onions to make the top pretty to serve. Toss with tongs so the avocado doesn’t break up too much. I also would make this the day you will serve, it gets a little too wet if it sits overnight!
