Hearts of Palm Salad

Hearts of palm is becoming more popular here in America but in Brazil, it is beloved and used all the time, in Portuguese it is called Palmito. We have it in salads, plain, as a filling in pastries, and this salad is so good, you will love it as much as we do. It is super fresh and easy, only takes a few minutes to get whipped up and you can prepare it ahead and chilled before serving. I love to serve it with a steak but it is great whatever you serve it next to. It is vegan, gluten free, Whole30, low carb, and totally perfect for summer evenings.
