School is in session and I wish it meant the fall weather had also arrived, it is still so hot here! I long for those crisp days with leaves falling around and sweaters are placed back in the closet. Too bad we live in Texas, this is rarely an occurrence here, I loved it when I lived in Boston for a year. But let's be honest, having kids back in school takes time to get readjusted and I need simple, especially since my little one is home for another week! This recipe is perfect, doesn't heat up the house, has fall flavors, and it only has five ingredients. I think that checks every busy person's agenda at this point in the year. Perfect for meal prep too, just throw everything in, walk away, and have a bunch of yummy pork ready! Pork and apples go together like peanut butter and jelly and the BBQ sauce adds a ton of flavor with minimal effort. Added upside is that this is Whole30, gluten-free, dairy-free, soy free, and added sugar free if you choose the right BBQ sauce. An easy dinner that you can feel good about and it literally takes less than 10 minutes to prepare.

Slow Cooker BBQ and Apple Pork

  • 2-2 1/2 pounds pork tenderloins (I had a pack with 2 tenderloins)

  • 3 Granny Smith Apples, sliced into 1/2" slices

  • 1 teaspoon ground cinnamon

  • 1 large onion, roughly chopped

  • 1 jar BBQ sauce - I used Tessemae's

- Layer the tenderloins at the bottom of the slow cooker, top with apples and sprinkle with cinnamon, then add the onions and BBQ sauce, stir it all up. Cover.

- Cook on LOW for 6-8 hours or HIGH for 3-4 hours

Enjoy with roasted butternut squash or sweet potatoes and a salad

This is the only chopping/prep needed to get this in the slow cooker. Those recipes that need at least 30 minutes of prep and some cooking are just not realistic sometimes.

Pork, apples, cinnamon, onions, BBQ sauce. I love Tessemae's because it is only sweetened with dates and has a great depth of flavor. I have also heard amazing things about the New Primal BBQ sauces that just came out, just use your favorite brand!
