Slow Cooker Italian Shredded Pork

There is something about shredded pork that is just so beautiful and delicious. But the most common ways I have seen it are either Mexican spiced or some BBQ pork situation, why limit it? Don't get me wrong, I love me a good Spicy Shredded Pork or a BBQ sandwich with sauce dripping down my arm.

I wanted to change it up but still making it a simple recipe that everyone would enjoy because this mama needs it easy and no one to complain. This lovely is made in the slow cooker and your house will smell so good, you will want to lick it. Roasted garlic is a gift from God in my opinion... I took some inspiration from Nom Nom Paleo's Kalua Pork with the garlic, if you haven't made that yet, go do it, it is magical. I am lucky enough to have a few rosemary bushes in my backyard, they are literally the first plant I have been able to keep alive, so there is hope for everyone. And this takes minutes to get into the slow cooker in the morning. I actually had a workout planned with a playdate scheduled right after and I came home and got this into the slow cooker in the minutes to spare in between!

Simple ingredients mean it is real food that is naturally gluten, dairy, grain, sugar, and nut free, helping those who are Paleo, keto, or low carb. Rocking the September Whole30, you are covered too! This is perfect because it makes a great dinner and leaves a ton of leftovers that you can use for breakfast, lunch, or dinner. I served it with some little roasted potatoes and broccoli for a delicious dinner. What other ways can we re-imagine shredded pork?

Slow Cooker Italian Shredded Pork

  • 1 onion, about 1 cup, diced and divided

  • 10 cloves garlic

  • 3 1/2 pound pork roast

  • 1 Tablespoon dried basil

  • 1 Tablespoon dried oregano

  • 1 Tablespoon dried thyme

  • 1 Tablespoon dried chopped onions

  • 1 Tablespoon dried salt

  • 1/2 Tablespoon cracked pepper

  • 2 Tablespoons fresh rosemary (or 1 Tablespoon dried rosemary)

  • 1/2 cup chicken broth

- Put half of the onion at the bottom of the slow cooker. Mix the herbs, salt, and pepper in a small bowl.

- Taking a small knife, slice 10 deep holes and place a garlic clove in each pocket. Rub the herb mix all over the pork. Place the pork into the slow cooker and cover with the remaining onion, then drizzle in the broth.

- Cover and cook on LOW for 8-10 hours or HIGH for 4-5 hours until falling apart and tender.

- Shred and enjoy!

The herbs take this roast to another bellissima level, I'm sure you have most of these in your pantry!

Take a knife and get a little aggression out, channel your inner Dexter and stab that pig! Kinda wiggle it around so it makes enough space for each clove. I know 10 cloves of garlic sounds a little much but trust me, it is perfect.
