Slow Cooker Green Chile Chicken

We are totally at that point in the summer where it's too hot too cook and my brain is fried anyway so I need SIMPLE dinners. And yet again, I turn to my trusted slow cooker to help a mama out! This is a great recipe to have everything on hand for those days where you didn't remember to prep something or you just cannot put any extra effort into anything. Parenting in the Summer is tough y'all and this one is really throwing me. I think between the kitchen remodel, my youngest being too young for a lot of camps, and some personal stuff, I am in the weeds. This chicken has saved my booty many a night, especially nights were I cannot even spare extra energy to make a meal. The CONSTANT fighting is draining... and sometimes you just don't want to do anything. 

The one thing the kids won't fight about and takes literally a couple minutes is this chicken. Perfect to make an easy taco night, filling for enchiladas, top a salad, burritos, quesadillas, rice bowls or even a breakfast that I will share with you soon! This makes a good amount so you have more than one almost effortless dinner. Just cool it completely and pop into a freezer bag then into the freezer, thaw in the fridge overnight or in a warm bowl of water.

Slow Cooker Green Chile Chicken

  • 4 chicken breasts
  • 1 cup Salsa verde
  • 1 can (7 oz) chopped green chiles
  • 2 Tablespoons taco seasoning

- Place the chicken breasts in a slow cooker.

- Combine the sauce in a measuring cup and pour over chicken, make sure the sauce is mixed with all chicken pieces.

- Cook on LOW for 4-6 hours or HIGH for 3 hours. Shread and enjoy!

Chicken, sauce mix, combine with chicken, and top it off. Fix it and forget it!

You could even place the chicken and add the sauce to a freezer bag and freeze it for future dinners! Just thaw in the fridge overnight and top into the slow cooker the next day.

Ready to shred and use whatever way you prefer. This particular night, I made some delicious tacos. I used jicama tortillas and shredded cabbage with cilantro for an easy dinner.
