Frito Pie Nachos

Frito Pie is serious here in Texas, it’s everyone’s favorite for football games and easy family dinner. Nachos are also something everyone can get behind. So I thought, let’s bring these two together for the ultimate epic game day food! And OMG, it was so flipping delicious, my whole family devoured it and I’m still craving it! I made a simple chili and scooped it over a mix of Fritos, we love the Scoops regular and Jalapeno. Then added all the extras to make it just perfect. This is easy to make vegan by just swapping the ground beef for some plant-based crumbles and DF cheese or just leaving out the “meat” and adding more beans. These are already gluten free and if you use plant-based cheese, its dairy free.

Frito Pie Nachos

  • 1 Tablespoon oil

  • 1 small onion, diced

  • 1 pound ground beef

  • 1 Tablespoon tomato paste

  • 1 can hot green chiles

  • 1 cup tomato sauce

  • 1 teaspoon garlic powder

  • 1 teaspoon chili powder

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon taco seasoning

  • 1/2 teaspoon smoked paprika

  • pinch of all spice

  • 2 bags Scoops corn chips

  • 1 can dark red kidney beans, drained and rinsed

  • 1 bell pepper, diced

  • 1 cup corn

  • 2 cups shredded cheese

  • toppings - green onions, sour cream, pickled jalapenos, cilantro

- Preheat the oven to 425 and cover a baking sheet with foil if desired.

- Heat a large skillet on medium-high heat, add the oil and onions, season with salt and pepper. Once cooked and translucent, add in the beef, breaking up with a spoon until all browned. Stir in the tomato paste and cook for a couple minutes. Then pour in the tomato sauce, chiles, and seasonings, stir until all combined and bubbly. Stir in the beans and take off the heat

- Spread the bags of chips on the baking sheet and evenly dollop the chili all over the chips. Then scatter the peppers, and corn, finally topping with cheese.

- Bake in the oven for 15 minutes and top with desired toppings!
