Autumn Sausage Sheet Pan Dinner

I’m sure if you have seen my site, you have probably come to the conclusion that I love dinners to be easy and with the least amount of dirty dishes possible. Sheet pan dinners are perfect for those requirements, throw everything on one pan and boom, dinner is served! Now that we are in full Fall mode, I can bust out the hearty, carby veggies and apples. I feel like apples and pumpkin are the true flavors of Fall and I love them so much. I mean, I hear that some people get depressed in the cooler weather, but I am the complete opposite. If I could dream up the ideal place, it would be Autumn in the Northeast with a few sprinklings of snow and mild summer days. Anyone else feel that way? Clearly I am living in the wrong place, REALITY!

Anyway back to easy dinner…that went on a wild tangent! This is so simple to get together and if you add a salad on the side, it is a complete meal! Sausages are generally a winner for mealtime with my girls so using some simple chicken apple sausage was a no brainer. If you are on the Whole30, there are tons of options of compliant sausages and it helps so much knowing you have a seasoning and easy protein. I keep a variety of different compliant packages in my freezer at all times, just grabbing them when they are on sale. If you are vegan or vegetarian, I have seen so many new plant based sausages that would be perfect on this too. So if you need an easy prep, cook, and clean up with all those seasonal flavors, make this.

Autumn Sausage Sheet Pan Dinner

  • 2 cups potatoes, peeled and cubed (about 4 small Russets)

  • 2 cups sweet potatoes, peeled and cubed (about 1 extra large sweet)

  • 1 small red onion, halved and sliced

  • 1 large apple, sliced

  • 10 links chicken apple sausage, 2 packs (or favorite sausage)

  • 1 Tablespoon oil, plus more to drizzle

  • 1 teaspoon salt, plus more to sprinkle

  • pepper and smoked paprika

- Preheat the oven to 400

- On a large sheet pan, toss both types of potatoes with the oil, salt, and pepper.

- Layer on the sliced onions, apples, and arrange the sausages on top. Drizzle with additional oil, sprinkle with salt, crack some pepper, and sprinkle a little paprika.

- Bake for 30 minutes. Remove from oven and enjoy with a green salad!

Chop the taters and make sure they are pretty equal in size so they roast evenly. Toss with oil, salt, and pepper on the sheet pan.

Thinly slice the onion and then scatter it on top of the potatoes, making sure to separate each layer.

Thinly and evenly slice the apple then arrange in whatever pattern suits you that day. I went with a fan look…

Get the sausages on the pan then drizzle with oil, sprinkle with salt, pepper and paprika. It is ready for the oven!
